in the version I've attached, at the end of each repeat the quarter tone is lowered slightly if my ears aren't mistaken, especially in the instrumental repeats where "ah" of "ah ya sidi" would be. I assume this is done deliberately and I assume it is because it is more authentic?
Although I'm not technically qualified to answer this question, I think your guess is right. As far as my knowledge goes, in many cases like this one, theoretically speaking, the so-called Tunisian can hardly be differenciated from its oriental counterpart (here bayati). The difference resides in rather slight nuances at the level of the tones and perhaps also in the way the sentence is structured and the tone or groupe of tones that are considered typical of the mode. Specialists speak of a local "tone" or "spirit", and one thing is sure, that is that musicians and singers from the younger generations tend to lose that specific spiri and to treat the melody indifferently as though it were an oriental piece: For a good sample of the specific spirit!/tone in question, you should look for maluf recordings by the late Tahir (write Taher when you perform a search) Gharsa, Ziyad's father and you'll better understand what I mean.

Another minor question I have is about the observation I made that in my attached version, they seem to replace Sonia's "i's" with "u's"... for example Sonia says "fini ya lala" where as they say "fi w ya lala" (or "finu ya lala"?)

The ya lala bit is a sort of "lyrical onomatopia" among several others (janim, afandim, 'umrim...etc) with no lexical/semantic value whatsoever and whose sole function is to serve as filling material to complete the rythmic cycl so that to say ya lala or w-yalala (taht is adding a waw that is a connecterç doesnùt really make a difference.
